“MAD HUNGRY WITH LUCINDA SCALA QUINN” AIRS WEEKDAYS AT 11AM ET/PT, 10C ON HALLMARK CHANNEL. We had the pleasure to interview Lucinda to find out more about her new book, Mad Hungry: Feeding Men and Boys.

Lucinda Scala Quinn has spent much of her life feeding the men and boys in her life and teaching them how to feed themselves. Now Scala Quinn—chef, television personality, and Martha Stewart Omnimedia’s resident food guru—shares winning strategies for how to sate the seemingly insatiable, trade food for talk, and get men to manage in the kitchen. She provides recipes for single-skillet meals and dinners that yield fabulous leftovers and that are a cinch to stretch for extra guests. Her grab-and-run breakfast will help kids start the day right, and her healthful drinks make it easier for guys to say no to soda. Scala Quinn’s recipes are easy to prepare, affordable, and so good that even the most finicky eater will want to dig in.

In this day and age, we are all out of time.  What advice do you have to get to the balance of work and home?   How do we find quick, healthy, and cost efficient meals for our families?

Make it a priority. We spend so much time prepping for soccer practice or dance class- if we only took the same amount of energy and effort to balance our home and work life, we’d be a lot happier and a lot less stressed.  Try make-ahead meals, spend part of your weekends prepping for next week’s meals, make putting dinner on the table a family event instead of just a “mom” or “dad” duty.

Picky eaters are a fixture at many of our tables. We know the trick of disguising foods, but do you have any tips for getting picky eaters to knowingly and happily try new foods?

Make them a different way- bacon always helps! Pork products aside though, making foods appealing is half the battle; when Miles was younger he hated onions but loved Brooklyn so we told him the onions we used were from Brooklyn- suddenly, he loved onions.  You’re your kids are young, try to keep many varieties of colorful crunch and crispy veggies around for snacks. Try cucumbers, celery, carrots, sweet peppers (to add colors) and even some more exotic choices like Jerusalem Artichokes, radishes and fennel.

Husbands who are picky are also a problem- any tips for them?

Husbands are a little easier to convince. Try making things that have good childhood memories for them- the red beans and rice recipe is a recreation of my husband’s longing for the rice and beans his mother used to make when he was a child in New Orleans.  You might also try recreating meals you like to eat for take out- they’ll be just as flavorful but not as unhealthy and will be a welcome addition to your family’s weeknight meals. Some of my family’s take out faves are actually in the BUY or DIY story I did in the October Issue of Whole Living. The Crunchy Sesame Chicken Wings, Burger and BEC (bacon egg and cheese sandwich) from MAD Hungry are good go-to dishes as well.

Families are often at a loss for fresh fruits and vegetables because of time constraints.  Are there any veggies that are easy, both prep and time-wise?

First: veggie (and fruit) eaters are made, not born! For fruits, I’d try smoothies! They’re easy to prep, make and you can send your loved ones out the door in the morning with them- my boys love my Frothy Citrus Drink. I also put mashed bananas in different dishes like pancakes or chocolate chip cookies that my family has come to love and expect.  As for veggies, never stop serving them. I always put one or two vegetable options on the table- as kids, my boys weren’t natural vegetable lovers but now when they return home from college or a long trip, the first thing they ask for is cooked vegetables. Try them out in salads or raw bell peppers or cut up cucumbers make great snacks. Recipes like spiced sweet potato wedges, Japanese-style spinach, or ginger garlic glazed green beans take little time to prepare but payoff big time with flavor.

Obesity is rampant– how do we start hitting the drive thru less and start eating a wholesome meal at home?  What are the secrets?


Preparation! Like I said above, if wholesome meals and eating together is important to you, make it a priority. Spend a Sunday making meals for the week that can be frozen and cooked or simply reheated. One-pot meals, things that can be done ahead & freezer-friendly options all help you from hitting the drive thru on the way home and are shown on MAD Hungry TV. The major ingredient for last minute cooking is shopping. Make a plan, do it regularly, involve the kids. When the fridge and pantry is full, the meals are 100% easier to conceive and execute.

52 New Things – Weeks 42 and 43

It’s a double whammy New Thing week. With all of the Halloween excitement last week we failed to get our new thing posted. so here you go.

Week 42

Angie –

I took a kid free couples trip! Something my husband and I have not done since our oldest, now 5 was 9 months old! I’ve been away, and he’s been away but us getting away together was long over due and will definitely be something we try to do on a regular basis.

Trish –

My new thing is a steam mop.  The Shark to be exact.  I’m tired of mopping being hours long, with me drying the floor with towels… so I tried this mop.  It steams, so it sanitizes, and it dries in a matter of a few minutes.  So far, I’m a fan.

Week 43 –

Angie –

This week it’s all about some new recipes. We had some freinds over for Halloween/Football and I whipped up 3 new recipes. Not really sure why I decided to do that for the first time when people were coming over but they turned out pretty good.

Trish –

My new thing is kind of an “in progress” thing.  I have made a promise to travel more- with kids, without them, couples, girls only, you  name it.  There’s a world to experience and nothing stopping us.  I’m also going to try to teach/learn more about places I’ve never been by showing the kids- cooking dishes that are popular there, watching movies from there, etc.

Event of the Week – Moss Rock Festival

Another one of our favorite fall activities is coming up this weekend ( I know, I know, we have so many it’s hard to keep up)

It’s the Moss Rock Festival at The Preserve in Hoover.

Moss Rock Festival is a platform for the creative exchange of ideas that support a greener and more sustainable future. There will be 25-eco exhibitors onsite to educate festival goers about emerging eco-friendly innovations and new ways to live, work and play in tandem with nature. With exhibitors ranging from LEED (green building) to fuel-efficient car companies, it’s a chance for people in the community to learn about new products and businesses that provide simple lifestyle solutions and environmentally conscious ways of living.

The Wonderkids Studio will have interactive art workshops for kids using the observation of nature as a launching point for creative project. With special features by McWane Science Center and the Alabama Waldorf School.

To spank or not to spank?

Discipline.  It seems to be the one area of parenthood that parents struggle with the most.  We worry about inflicting internal damage, ruining self-esteem, raising wild kids… in short, we worry about causing damage in any way possible.  Nothing challenges a parent like having a 3 year old call your bluff, then laugh in your face when threatened with a consequence.

Spanking seems to be one of those taboo topics that we avoid.  What do other moms do when it comes to spanking?  What makes them handle it that way?  Is that something I’ve never thought about?   Talking about it (without fighting) is the number one way to help reflect and understand.

So let’s discuss.  Here’s what real moms here in Birmingham think.

Mommy K says, “We spank, but not for every offense. Spanking is effective and acceptable if handled correctly. We only spank for outright defiance or when repeated time-outs don’t work. The most important thing is to make sure you verbally reinforce why you spanked them and why the behavior is unacceptable, and reassure them you love them. Any time I have to spank one of my girls, I have them sit on my lap and we talk about what happened, I cuddle with them for a minute, and then off they go.”

Mommy LD says, “I grew up being spanked. My husband did not. We decided that we would not spank our children. It’s been really hard for me at times to not resort to spanking. It is so much a part of who I was, that it was hard to not resort to that just on instinct.

For us, Time Outs have worked. They’re not easy, though. I think a lot of people think that they’re wishy-washy discipline. But for us, discipline isn’t punishment. Discipline is about our children understanding what is expected of them and what the consequences will be if they fail to live up to our expectations. Discipline is about consistency. We can put our children into Time Out every single time they don’t heed a warning–even for smaller things. As a parent, I’m not willing to smack my child every time they do something wrong. But how can a child know what to expect or learn if they don’t know when the smack is coming?”

Mommy D says, “I don’t spank simply because I feel hypocritical telling my child not to hit but yet she can be spanked??? Discipline is very confusing to children…it’s very confusing to adults a lot of the time.  Anger is one of the lowest in the hierarchy of emotions that people feel and express, acting on anger is surely the lowest form of expression and quite often with children and adults hitting can be one of the quickest reactions to anger…I personally don’t want to generate any association between the two to a child.”

Mommy DD says, “My dad hit us a lot and all it did was make me fear him and distrust him. I don’t want that kind of relationship with my son. I think hitting is a primitive response, an instinct that is very ingrained in us, and hard to resist. I have wanted to hit him, especially when I’m tired. I have had to put him in his crib and walk away, give myself a “time out”. I’m a single parent so there’s no one to hand him off to when I start to reach the limit of my patience.”

Momma K says, “I spank very rarely. Mostly in situations when what my child is doing is dangerous, i.e. trying to pull the light socket covers off with a gleam in her eye and my keys in her hand, or trying to open the oven door. (She’s never actually achieved either of these goals due to baby-proofing) And technically, I don’t spank, I usually thump the back of her hand.

My husband’s family are very strict spankers, and I think they go overboard. One sister-in-law starts thumping baby hands at 3 or 4 months old. I am not a fan of this. Their children are EXTREMELY well behaved, but it makes me wonder how much of it is fear? They all ascribe to the Amish To train up a child book. I read it and I do not agree with most of their teachings, but it gives some good insight about being consistent, and reacting immediately to a negative behavior. In my opinion, spanking can be a very strong parenting tool when you have the need to communicate something strongly and effectively, therefore it should really be a last resort. I try to keep the girls engaged and busy, as to avoid situations where discipline is needed, but that is not always the case (obviously!) For the biggest part of our parenting, we use sitting out, and loss of privileges. I’m a new mom, and I don’t know for sure where I will land on all this stuff, but that’s where we are right now.”

Mommy Dani says, “[My husband] and I use spanking very rarely and as a last resort, but if the situation is dangerous enough or all else has failed, we spank. I believe that all kids respond differently to different types of discipline. Spanking was the only discipline I received growing up, and I never wanted to limit our household to only spanking because I think there are other effective ways to change behavior. We try time out and limiting first, then a final warning and reasoning as to why he is about to be spanked if he doesn’t stop. Discipline should really be based on the kid’s personality and age in my opinion. My child is pretty receptive to reasoning, so we don’t have to use our last resort very often. If we ever do have to use it, afterward, we have a discussion about what he did and should do next time, we snuggle and then it’s over. I make sure he always knows that I didn’t spank him because I was mad at him and I want him to learn to follow instructions so he stays safe.”

Pumpkin Patch Express – Heart of Dixie Railroad Museum
The entire family will enjoy an autumn train ride aboard the Pumpkin Patch Express!  The excursion lasts approximately 1 1/2 hours, including our time at the Pumpkin Patch. At the Pumpkin Patch, riders will de-board to enjoy a hayride, jumpstation, coloring, and temporary tattoos (all activities are included in the price of your ticket!)  Bring your camera to take photos in front of the giant pumpkin!  Snacks and soft drinks are available for purchase.  Pick the perfect pumpkin from the patch for an additional fee.

Boo at the Zoo
Wear your favorite costume and make your way through safe candy villages and game zones. Ride the Jurassic Express, Creepy Crawly Carousel and the Hallowed Hay Ride. Enjoy live entertainment each night and see an animal up close. Don’t forget to walk through the Alien Reptile Experience. Ghoul Skool is a time honored tradition at Boo At the Zoo. The classes are about ten minutes long and little goblins are taught how to howl like a wolf, rattle chains like a ghost, walk like a monster, cackle like a witch, and much more to graduate! Classes are taught by our Ghoul Skool Mistress!

Itty Bitty Magic City NOTE: ITTY BITTY IS AN ITTY BIT SMALLER THIS SUMMER!
The Itty Bitty Magic City will be on display this summer in addition to The Adventures of Mr. Potato Head exhibit. The Itty Bitty City is a little bit smaller than usual, but favorite areas including the grocery store, Tot Spot area, crane, and factory are still in the city. The Itty Bitty Golf Course and a few other items were removed temporarily to make room for the new exhibit “The Adventures of Mr. Potato Head” that is also designed for an early childhood audience and they will return in the Fall.

NatureScope –  Explore the great outdoors from inside the museum. McWane Science Center and the Birmingham Audubon Society are partnering to create a new exhibit called NatureScope. Explore the science of the birds and the bugs in this new area! Get up close and personal with some resident creepy crawlies! Learn what role insects play in our ecosystem with the decomposition chamber. Meet large bugs including emperor scorpions, a tarantula, and even a giant African millipede!

Animalopolis at the IMAX – ANIMALOPOLIS will take you on a voyage into the magical world of animals. A bit fanciful, a bit “Seussian” perhaps, a place of good natured humor, beauty and just plain fun for kids and their parents.

Lorikeet Aviary – Our Lorikeet Aviary has more birds than ever! Zoo guests can feed these exotic birds every day. You and your family will see these birds’ behavior as they eat nectar out of your hand.

Halloween Safety Tips…

A few things for you to keep in mind when taking your little Goblins out for Trick or Treating… This is the scariest spookiest holiday of the year and it never hurts to have a little refresher on the precautions of keeping your little ones safe.

1. Light Up.. Make sure those kiddos (and you) are easily seen while out walking the streets. Have plenty of flashlights and glow sticks to hand out before heading out. If you’re doing goody bags for a party consider including those. Dimly lit streets, children in costumes they can’t see out of, and cars can make a terrible combination. Another really bad combination is a lit jack o lantern and a costume that isn’t flame retardant! Check those labels. Only flame retardant materials should be used on costumes.

2. Make sure those costumes fit properly. They should not be so long that they are a tripping hazard. According the the National Safety Council, falls are the leading cause of unintentional injuries on Halloween. Who knew?

3. It should go without saying but when it comes to accessories, it’s not ok to give little junior an actual samurai sword to complete his look. Make sure that all swords, knives, daggars and sharp objects are made from cardboard or flexible materials.. If you’re tripping over your too long costume the last thing you need is a sharp blade to fall on.

4. Check that candy. In case you haven’t been watching Law and Order, it’s a crazy world we live in and people do very strange things. If you happen to get fruit (how dare they) make sure it’s washed thoroughly and cut into small pieces.. Remember the razor blade stories we all grew up with? Any unwrapped candy should be tossed without question. (and those gross little peanut butter candies that are wrapped in black or orange paper, throw those out on sheer principle.) Just remember, when in doubt, throw it out.
