School might be back in session, but summer isn’t quite over and we’ve been eating up as much of the Summer Veggies as we possibly can.
Here’s our version of this great recipe that is super easy and super cheesy!
What You’ll Need:
1 Tbsp Olive Oil
1 Potato (or root vegetable of your choosing)
1-2 Yellow Squash
1 Zucchini
1 Tomato
1 Yellow Onion, diced
2 Cloves of Garlic, minced
1 1/2 Cups Italian Cheese
Salt and Pepper to taste
Parmesan Cheese to taste
What You’ll Do:
Preheat Oven to 400 degrees. Saute onion and garlic in olive oil until soft.
Spray the bottom of an 8 x 8 baking dish with non stick spray. Slice your potato, squash, zucchini and tomato into thin slices. Once your onion and garlic mixture is finished cooking, pour into the bottom of your dish, then stack your veggies in an alternating pattern, vertically in your dish. Sprinkle with Salt and Pepper.
Cover with foil and bake for 30 minutes. Remove from oven, cover in cheese and bake uncovered for an additional 10-15 minutes or until cheese is all melty and starting to brown.
Remove from oven and sprinkle with Parmesan cheese, and serve.
