Droolicious Cuisine at BirminghamMommy.com: Authentic Mojitos

It’s May Baby! We’re going to welcome Summer here in Birmingham the right way! Mommadrool has handed over her recipe for authentic Mojitos and we’re already beginning to drool. So mix up a pitcher and head out to the patio with good friends for some good times!

Authentic Mojitos

Ingredients:

Fresh Mint Leaves

Powdered Sugar

Fresh-squeezed Lime Juice

Whole limes, cut into eighths

Bacardi Rum

Club Soda

Ice Cubes

Directions:

1) Put four mint sprigs into the bottom of a glass. Add 2 teaspoons of powdered sugar and 1 teaspoon of fresh squeezed lime juice. Use a pestle to pummel ingredients in bottom of glass.

2) Top with ice cubes. Squeeze lime wedge over ice and add wedge to glass.

3) Top ice cubes with 1/4 cup of Bacardi Rum and 3/4 cup of Club Soda. Stir and enjoy!

Finding Fables: A Guide to Storytimes for Birmingham Moms – Mr. Mac

Mr. Mac – North Shelby Library

Mr. Mac has become a Birmingham favorite among Moms when considering a local storytime. He’s even advertised as a “Storyteller Extraordinaire” at the North Shelby Library.

He sings, he plays the banjo and harmonica, and he brings a bag of tricks, okay, maybe not so much tricks but he does have a bag of puppets. If you are looking for a storytime that is interactive and truly suitable for all ages, this is definitely one you want to put on your list to visit. The older ones will jump right in and participate, singing, and dancing, even answering his questions. The younger ones are mesmerized by all of the goings on… There is a little something for everyone in this storytime.

The North Shelby Library usually has snacks out and you can count on Mr. Mac having a themed storytime coordinating with some holidays. In addition to The North Shelby Library, you can catch Mr. Mac at Emmet O Neal Library in Mountain Brook, and at Albert Scott Library in Alabaster.

52 New Things – Week 18

Jamie –

My new thing this week was a new recipe.  Shocker. It was a great almost-summer meal.  Light, but full of flavor!

Summer Pasta with sun-dried tomatoes, broccoli and white beans

Ingredients

1 pound whole wheat pasta shells (small) – or any type of smaller pasta will do
2 tablespoons olive oil
2 tablespoons of minced garlic
1 lb of fresh broccoli crowns
1 cup oil-packed sun-dried tomatoes (about 12 pieces), sliced
1 (15-ounce) can cannellini beans, rinsed (can also substitute Great Northern or other white bean)
Salt and pepper to taste
2 tablespoons grated Parmesan cheese

Directions

Bring a large pot of salted water to a boil; add pasta and cook until al dente according to package directions. Reserve a cup of the pasta cooking water and drain pasta thoroughly. Lightly steam broccoli.

Meanwhile, in a large sauté pan over high heat, heat olive oil. Add garlic and cook until fragrant but not browned, about 1 minute. Add sun-dried tomatoes and cannellini beans and toss lightly. Taste and adjust seasoning with salt and pepper.

Add hot drained pasta to the pan (or to a larger bowl if needed) and toss with the vegetables. Stir and add a few tablespoons of reserved pasta cooking water if mixture seems dry. Season and taste again. Serve immediately with freshly grated Parmesan cheese.

Trish –

My new thing this week was taking charge of our family finances.  I handle our money, but I admit I neglect parts of it.  I have a great system I’m going to start using and I’m going to track every penny that tries to escape from our account!  We seem to spend tons of money and have little to show for it…errr… I tend to spend tons of money… my husband just shakes his finger at me and pleads for me to stop. 🙂

Angie –

For me this week it’s all about a new moisturizer. I’ll admit, I don’t take great care of my skin. I’ve been a sun worshipper and tanorexic most of my life. I rarely wash my make up off and tend to use baby wipes more than my facial wash. I don’t buy expensive stuff and I’m not brand loyal. When I run out, I try whatever I see, or whatever my favorite celebrity is endorsing. I freed my radicals for the longest time just because Jennifer Garner was endorsing it! Anyway, I’ve now moved on to Neutrogena Aging Intensives – Deep wrinkle *gasp* formula. I figure now that I’m in my 30’s I should start paying attention to those fine lines that are appearing. So far I like it but it’s been less than a week. Let’s see if it really wipes out the frown lines!!

Creative Children's Art Displays – Because Refrigerator Magnets Just Aren't Going to Cut It

If you remember back a few months ago we did a post on how to store/organize and or display your children’s artwork. We’ll we are coming to the end of another school year and you no doubt have an influx of more adorable masterpieces that need a home. We’ve come up with some more ways for you to stylishly display those little works of art.

A Shadow Box/Box Frame or these DynamicFrames are great because they are dual purpose. They look like a frame, yet have the storage of a box or album. You can always display the newest masterpiece in the front and not have to worry about what to do with last weeks print because it stays safely and neatly put away.

Canvas Masterpiece – Very easy and eye pleasing. Use a canvas to display some of your favorite pieces or make one per year. We’ve been seeing this around and even know of a local company called  Big Art Blessings doing them professionally. Because we here at BirminghamMommy.com fancy ourselves (albeit loosely) Do it Yourselfers, not to mention the fact that I happened to have 6 blank canvases in storage, we decided to give it a go and I think it turned out ok. A little Mod Podge and placement perfection and you can have a cool piece of art to hang in any room of the house. Now if you aren’t a do it yourselfer or want to kick it up a notch give Big Art Blessings a call, they do really cool stuff, and their technique will also preserve your art.

Placemats – You may have made these before when you were a kid, or maybe with your kid. Have you ever thought about turning those pieces of artwork into a placemat? It’s pretty simple and what’s really nice is that each child can make one, use it at their seat at the table and everyone always knows their place by their artwork. You can also double up and make it 2 sided.

Here’s what you need:

Chosen artwork from your child – something about the size of 11 x 17 – or smaller, use a current placemat as a guide if needed.  (You can also do a collage by gluing smaller pieces of art onto cardstock)

2 sheets of clear laminate (per mat) approximate size of your artwork or contact paper.

How To:

Cover the artwork on both sides using the laminate paper, following directions on the package.

Trim edges if needed, to add a little flair use pinking shears or other decorative scissors

It doesn’t get much easier than that! And who knows, maybe it will make mealtimes a little easier with something fun to look at.

Birmingham Gets "A Play Place"

We recently had the opportunity to stop by and check out the new indoor play area, A Play Place. Located in Trussville off of Hwy 11, it’s the perfect place to go when you are looking for a little indoor playtime. Birmingham Moms are always looking for alternatives when it comes to beating the summer heat or trying to get out of the house for some rainy day activities.

What we like about A Play Place is it’s clean, like really really spotless clean. How many places can say that? The owner, Dana, a Mom of 2, takes great care and pride in keeping her facility as germ free as possible. She also does things a bit differently when it comes to outside food or drink….. She allows it! She actually allows you to bring in your own food and snacks for the kiddos, so pack a lunch head out there and let the kiddos play. They can explore the 2 level play set, the rock wall and the tube slides. When it’s time for lunch or snack, they can take a little break and you can breathe easy knowing you aren’t going to have to shell out huge bucks for food.

Meanwhile, at the airport…

By rights, I should love the Birmingham Airport.  After many years of dealing with Boston’s Logan Airport – the insane traffic into the city, the usurious cost of parking and the labyrinthine security lines that stretch all over the terminal and move forward approximately two inches per hour – Birmingham’s airport is a transportation dream come true.  It takes me 15 minutes from my driveway to a sweet parking space in the garage, for which I then pay only $1 – ONE DOLLAR! – per hour to occupy.

Country Fried MamaAnd yet, I can’t muster strong affection for our local airport.  Because that is where, every few months, I drop my mom off at the curb so she can go home to Massachusetts.

Generally, on our way there, I tell her all the things she would enjoy about life in Alabama:

Your granddaughters.

The weather.

The cost of living.

Your granddaughters.

The food.

And oh, did I mention? Your granddaughters.

She always has some lame excuse for not agreeing to relocate immediately.  Something about her job – blah, blah, blah – or her home – blah, blah, blah.

So she’s not moving South right now.  She did come visit recently, though, to keep me company while my husband was in Japan.

I think I kept most of my dirty, little parenting secrets in check while she was here, but I can’t help wondering what my mother thinks of my mothering.  If she saw me with my kids more frequently but for shorter periods of time, would she have a different impression of my mothering?

If, say, she never heard the frustrated way I talk to my toddler when we rise before the sun, would my mother be more impressed with my parenting skills?

If she saw me for an hour over lunch instead of in the final hour of a seemingly endless day, would she think more highly of my levels of tolerance and patience?

Would she think, “Well, she wasn’t the easiest kid, but she’s a good mother?”

I have a vivid and shameful memory of myself at about 12, throwing a dramatic tantrum sparked by my mother’s reaction to my request for a denim jacket — a really ugly, oversized denim jacket with rhinestones all over it that I wanted IMMEDIATELY.  I’m not sure she had even said “no.”  It might be that she had said, “later.”  Regardless, I was enraged.

I had no fashion sense, but I had a strong will.

Does my mother think of that moment when my children lay down at my feet and scream and pound their little fists against the floor?  Does she swallow a smile of satisfaction to see me struggle?

What goes around, comes around, little girl.

If so, she never lets on.

She doesn’t say, “You were awful! It will only get worse.”

She doesn’t criticize.  She doesn’t tsk, tsk.

She does make it clear she thinks I’m a bit stingy with TV time and juice boxes, and while I might struggle to teach my kids to hear “no” or “later” with more acceptance than I once did, my mother is now quick to grant most requests.

Which, I suppose, is as it should be, and is only one reason why my girls also have some mixed feelings about our trips to and from the airport.
