52 New Things – Week 18

My new thing this week was a new recipe.  Shocker. It was a great almost-summer meal.  Light, but full of flavor!

Summer Pasta with sun-dried tomatoes, broccoli and white beans

Ingredients

1 pound whole wheat pasta shells (small) – or any type of smaller pasta will do
2 tablespoons olive oil
2 tablespoons of minced garlic
1 lb of fresh broccoli crowns
1 cup oil-packed sun-dried tomatoes (about 12 pieces), sliced
1 (15-ounce) can cannellini beans, rinsed (can also substitute Great Northern or other white bean)
Salt and pepper to taste
2 tablespoons grated Parmesan cheese

Directions

Bring a large pot of salted water to a boil; add pasta and cook until al dente according to package directions. Reserve a cup of the pasta cooking water and drain pasta thoroughly. Lightly steam broccoli.

Meanwhile, in a large sauté pan over high heat, heat olive oil. Add garlic and cook until fragrant but not browned, about 1 minute. Add sun-dried tomatoes and cannellini beans and toss lightly. Taste and adjust seasoning with salt and pepper.

Add hot drained pasta to the pan (or to a larger bowl if needed) and toss with the vegetables. Stir and add a few tablespoons of reserved pasta cooking water if mixture seems dry. Season and taste again. Serve immediately with freshly grated Parmesan cheese.

My new thing this week was taking charge of our family finances.  I handle our money, but I admit I neglect parts of it.  I have a great system I’m going to start using and I’m going to track every penny that tries to escape from our account!  We seem to spend tons of money and have little to show for it…errr… I tend to spend tons of money… my husband just shakes his finger at me and pleads for me to stop. 🙂

For me this week it’s all about a new moisturizer. I’ll admit, I don’t take great care of my skin. I’ve been a sun worshipper and tanorexic most of my life. I rarely wash my make up off and tend to use baby wipes more than my facial wash. I don’t buy expensive stuff and I’m not brand loyal. When I run out, I try whatever I see, or whatever my favorite celebrity is endorsing. I freed my radicals for the longest time just because Jennifer Garner was endorsing it! Anyway, I’ve now moved on to Neutrogena Aging Intensives – Deep wrinkle *gasp* formula. I figure now that I’m in my 30’s I should start paying attention to those fine lines that are appearing. So far I like it but it’s been less than a week. Let’s see if it really wipes out the frown lines!!
