Recipe: Cheesy Vegetable Bake

School might be back in session, but summer isn’t quite over and we’ve been eating up as much of the Summer Veggies as we possibly can.

Here’s our version of this great recipe that is super easy and super cheesy!

What You’ll Need:

1 Tbsp Olive Oil
1 Potato (or root vegetable of your choosing)
1-2 Yellow Squash
1  Zucchini
1 Tomato
1 Yellow Onion, diced
2 Cloves of Garlic, minced
1 1/2 Cups Italian Cheese
Salt and Pepper to taste
Parmesan Cheese to taste

What You’ll Do:

Preheat Oven to 400 degrees. Saute onion and garlic in olive oil until soft.

Spray the bottom of an 8 x 8 baking dish with non stick spray. Slice your potato, squash, zucchini and tomato into thin slices. Once your onion and garlic mixture is finished cooking, pour into the bottom of your dish, then stack your veggies in an alternating pattern, vertically in your dish. Sprinkle with Salt and Pepper.

Cover with foil and bake for 30 minutes. Remove from oven, cover in cheese and bake uncovered for an additional 10-15 minutes or until cheese is all melty and starting to brown.

Remove from oven and sprinkle with Parmesan cheese, and serve.

As you can see, this dish is very versatile for many different dietary needs. Sub your favorite veggie for one listed and let us know how it turns out!

Out of the Box, Lunch Box Ideas

Let’s face it, packing a lunch for your kids every. single. day. Can get old really fast. For them and for you. Sure, we start the year out all energized. We walk the aisles of the grocery store picking out all the healthy things, and thinking how you’re going to rock some lunch kabobs with cheese cubes and ham. You snag a few new cookie cutters so you can make even that “boring PB&J” something fun. But we all know in 3 days time you’ll be back to the store stockpiling the lunchables… We’re not here to judge. But maybe we can offer some help!

We had the pleasure of talking with Birmingham Magazine and offering up some ideas to them, and it really can be simple. For one,  just putting their food on a stick, think “deconstructed sandwich” if you will, will mix up that regular ole bread and cheese.  And dips! Kids love to dip things. Hummus, ranch, peanut butter are all great to add in with their fruits and veggies.

If you’re looking for a little something more… Try one of these:

Peanut Butter Apple Wraps

1 medium apple
1 Whole Grain wrap
2 tablespoons peanut butter
1 teaspoon honey
½ teaspoon cinnamon (optional)

Wash, peel and core apple.  Slice the apple into thin slices.
If using cinnamon add the cinnamon into the peanut butter spread.
Create the peanut butter spread by stirring together the honey and peanut butter.
Spread the peanut butter mixture onto your wrap, add apples and fold like a burrito.

*Variation of Peanut Butter Apple Wraps, replace apples with a banana.

For Peanut Allergies or to mix things up a bit:  Replace the peanut butter spread with the following spread; 1 tablespoon of whipped cream cheese, 1 tablespoon  vanilla low fat yogurt, 1 teaspoon honey and 1/8 teaspoon vanilla extract.

Pinwheels

Cream cheese, alfalfa sprouts, and ham slices wrapped up in a tortilla. With a side of baby carrots.

*BLT version with sprouts, bacon, and mayo.

Breakfast for Lunch

Chocolate Chip Waffles with a side of *Berry Parfait

Berry Parfait

6 oz. low fat vanilla yogurt
1/2 cup frozen Berry Medley
1-2  tablespoon Grape Nut cereal

Add yogurt to a travel container, top it with frozen berries and grape nut cereal.

*Keep the berries frozen when adding them to the yogurt, it will help keep yogurt cool and will be thawed by lunch time

Tax Free Holidays Offer Back-To-School Savings

If you’re looking for back-to-school deals, or even early Christmas presents, take advantage of the state’s tenth annual State Sales Tax Holiday August 7-9. Started in 1997 as a way to help families with the high cost of clothes and school supplies, it has swept the nation, with 17 states participating this year. If you can wait a few days after school starts, you’ll snag an extra 4% discount.

At the stroke of midnight on August 7, Alabama retailers in participating localities will withhold state sales tax and use tax on selected items for three days. Shoppers in Birmingham will enjoy a price break on clothing, classroom items, computers and books. Not all cities and counties in the state will take part, and some might apply local taxes. Here’s what you can expect to save on:

Clothes and Shoes

Each item must be $100 or less. It includes tops and bottoms, school uniforms, jeans and jackets. Look for discounts on tights and socks, hats and underwear. Footwear, from sneakers to those summer bargain sandals, is also tax-exempt. The discount applies to diapers, too, so your littles won’t miss out, either.

Computers and Software

Maximum purchase price: $750. Not until Black Friday will you find deals this good on a laptop or desktop. Printers, paper and ink cartridges are also exempt. The category known as “accessories” gets tricky: You must buy them as part of a package with a computer because items sold separately like mice and speakers, are not exempt. And you will want to check out separate deals on smartphones because they will be taxed, as well.

School Supplies

Each item must cost $50 or less. This is a broad category that includes your usual binders, calculators, pencils and pens.  It also includes school art supplies like paints, clay and sketch pads. Textbooks between $30 and $50, maps and globes are also part of the deal. Books, treated as a separate item, must be $30 or less to be state sales tax-tax exempt.

Watch for Exceptions

The list of what is and is not tax-exempt can get pretty tricky. Some can be downright comical: belts are excluded from sales tax, but separate buckles are taxable. Eyeglasses are non-taxable; goggles are taxed. You won’t pay tax on sneakers but you will on skates and ballet shoes. School uniforms are not taxed but patches and the sewing materials used to affix them are. Here is a list of all exempt and non-exempt items.

Skip the Stores

Take a cue from Cyber Monday and shop online when possible. This should be easy to do with standard items like spiral notebooks and other school supplies. Do a reconnaissance mission before clothing sales to get an idea of sizes, price ranges and colors. You can also use an app like PriceJump or a browser extension to find what you’re looking for and make instant comparisons.

Stack those Coupons

In many cases you can combine offers to get the best deals. Try accessing a retailer’s website through a couponing website. This works for national retailers  as well as local stores. Combine manufacturer and store coupons, and, if you’re so inclined, open a store credit card or join its email list to save more. Finally, look for deals that earn cash back or give rebates.

Be a Smart Shopper

Whenever you take advantage of any sale, always make a list of what you really need first and stick to it. Be careful not to overspend just because the tax holiday is going on in your area. To keep things in perspective, remember that the regular state sales tax rate in Alabama is only 4%, so that’s how much money you’ll be saving. Think of it as icing on the cake to your other discounts. By shopping around and using coupons, the deals will definitely be worth your while.

Tips for a Smooth Back to School Transition

Time for the school bell to ring! Here are a few tips for making it a smooth transition:

1. Start going to bed on time and getting up at school time NOW. Get your kids used to the new rhythm that will be expected of them.

2. Designate a spot (night stand maybe?) for their clothes for the following day. Make the rule that no one comes to your room or downstairs until they have dressed, used the potty, washed up, and brushed teeth.

3. Getting in and out of the car is hectic and frustrating. Make the rule: Don’t speak until you’re buckled. This will nix the lengthy conversations that make you late!

4. Talk, talk, talk. Tell them what to expect, talk about when you were younger and going to school, and give them something to look forward to like an special afternoon treat or snack.

5. Afterschool snack time was my favorite childhood routine. I sat at the table and did homework while my mom cooked, picked up, etc. We chatted but it was very relaxed. After a long day at school, it was just what I needed.

6. Prepare and Designate a Homework Space. For older children allow them to set up a space in their room and stock it with what they will need. For younger children a space in the family room or kitchen where they can be monitored and supervised is best.

7. Allow them to help you shop for lunch supplies. We all know that they are more likely to eat what they help pick out- within reason of course.

The Kids Ultimate Fitness Challenge is the nations largest mobile fitness event for kids traveling from coast-to-coast dedicated to helping keep kids healthy and active. Little kids learn from an early age how to interpret the word “brave” – it means trying something (a big slide, swimming  in the deep end, broccoli) even if they’re afraid to do it. We think of “brave” people as those who risk their lives fighting fires, going to war, and arresting criminals. The idea of one day holding one of these jobs appeals to young children because right now, they don’t often feel “brave.” Instead, they often have lots of fears (the dark, ghosts, broccoli) that they are powerless to stand up against.  When little kids do try the scary thing – and especially when they succeed at it – we congratulate them and call them “brave.” That’s a very good feeling.

But, sometimes the “scary” thing the child is afraid of isn’t actually a great idea anyway. If your son’s friends are all jumping off a high wall and calling him a “baby” because he won’t do it, he has a pretty difficult choice to make: A) He can do the thing that his gut tells him is too dangerous or B) He can just ignore his friends and stay safe on the ground. If he chooses option A, it might go just fine. He jumps off with no injuries and everyone stops calling him names. Or, he could break his ankle and have to sit out of soccer for the rest of the season. With Option B, his ankle stays secure as do his chances of being a superstar at his game Saturday. The problem here is that your son doesn’t fully feel the choice is his because society has taught him that option A is the “brave” choice and option B is weak. What if we re-define “brave” to include doing what you feel is right even if it’s not what others are telling you to do? Anybody can jump off a wall but imagine the courage it would take to say to your friends that you’re not going to do the thing they so badly want you to do? For little kids, especially little boys, that’s very brave.

Last fall, while at Disney World, my 8-year-old and I stood F.O.R.E.V.E.R. in line for the Haunted Mansion ride. Slowly but surely, we wound through the creepy statues, fake tombstones, and carriage hearse and eventually made it inside. I was relieved that the ride could finally get started (and to have A/C). My daughter, however, had a different reaction. She realized as she took in more and more of the décor that this ride was going to scare her and that she didn’t really want to do it after all. When she told me this, my initial reaction was annoyance – what a colossal waste of time. I thought about telling her to “suck it up” (but, you know, nicely – like a mother would say that) and that there was no way to exit so we’d just have to ride but then it struck me: she knows this information will frustrate me. She knows we’ve been waiting forever, that I wanted to ride, and that I wanted her to ride. She’s telling me that she’s afraid despite the fact that this information won’t be well-received. She is listening to the small voice inside her that tells her when something does/doesn’t feel right for her. Who am I to force her to ignore that gut instinct? No, this voice can’t tell her to quit going to school or stop putting away her dirty clothes but is it really so important that she go on this particular ride? Will missing out impact her life at all? The fact is that she was brave to listen to that voice. She was brave to tell me that she didn’t want to ride even though she knew it might make me angry. The least I could do was honor her willingness to say it anyway.

I can think of a million reasons you want your child listening to his small, inner voice as he grows up. This is the voice that will help him avoid getting into a car with a driver who’s been drinking or getting physically intimate with someone before he’s ready. This is the voice that will encourage your daughter to keep playing sports in P.E., even if all of her friends are just sitting and watching. This voice will give your son the confidence to be honest when he doesn’t have his homework, instead of copying it from someone else. This is the voice that will warn your daughter to leave and tell an adult if someone touches her in a way that makes her uncomfortable. This voice is the embodiment of all the values you’re trying to instill in your child: Be your own person; Do the right thing even when no one else is looking; Do unto others as you’d have them do unto you; etc. If we don’t encourage our children to listen to their inner voice in times of stress, they’ll learn to do what others tell them instead of what they know to be right.

So, how can parents foster this “brave” inner voice? Look for a time when your child is learning a new skill. Respond to “I can’t” and “I’m scared” statements by saying, “It’s really brave of you to tell me that you’re afraid. It’s normal to feel unsure about new things.” Decide together if the new skill is something your child really wants to learn or if he may be feeling pressure from you or from peers to learn it. Encourage him to say how he truly feels about it without worrying what your reaction will be. Be neutral in your response, even if you feel aggravated. Once you find out if the motivation comes from him or external sources, you’ll know whether to push or back off. Just because she says she’s not ready to do something right now doesn’t mean she won’t be ready next week.
