Super Bowl, Super Excuse to Throw a Party

Super Bowl XLV is coming up this Sunday. The Carolina Panthers (War Cam Eagle) will take on the Denver Broncos and we are always looking for a reason to eat, drink and be merry.

It doesn’t matter if you’re a Denver fan or a pulling for the Panthers, we all like to eat and football parties to me, scream appetizers and dips! If you are attending or hosting a Super Bowl party this weekend.. Try one (or more) of these recipes to make your guests and friends happy! Don’t forget your easy gameday staples, like nachos, wings and a big crockpot of your favorite chili!

Chicken Enchilada Dip

1lb Boneless skinless chicken breast half, grilled and shredded
1 8oz pkg. Cream Cheese, softened
1 c. Mayonnaise
1 8oz. pkg. shredded Colby Monterey Jack Cheese or Mexican Blend
1 4oz can diced, green chili pepper
1 jalepeno pepper, finely diced

Mix all ingredients together. Cook at 350 degrees for 30 minutes. Serve with tortilla chips and Salsa

Crack – I’m not really sure how this dip got it’s name other than the fact that it’s down right addictive.

2 Rolls of Jimmy Dean Sausage (hot or mild, to your preference)
2 8oz Pkg. Cream Cheese
1 large Bottle of Salsa (we use Picante, as hot or mild as you want)

  • Brown Sausage and Drain
  • While browning sausage, soften cream cheese in microwave
  • Mix sausage and cream cheese together
  • Add salsa to desired consistency (just over 1/2 of bottle works well) Mix well
  • Bake for 30 minutes on 350 degrees

Serve with Frito Scoops

Bacon Wrapped Hot Dogs

8 hot dogs (your favorite brand)
8 hot dog buns

8 slices bacon

Optional Sides: Mustard, ketchup, mayonnaise,  grilled onion slices, chopped tomatoes, marinated jalepeno peppers

  • Wrap bacon around each hot dog and put on the skillet and cook until bacon is done (cook the bacon to your liking) the bacon usually sticks to the hot dog if not you could use toothpicks to keep together. When dog is done pull from grill or oven.
  • Spread mayonaise on the hot dog buns.
  • Place buns under broiler or grill for just a minute.
  • Put the bacon wrapped hot dog on the bun, at this point you may dress your dog with the optional sides.

Mac and Cheese Cupcakes

  • 1 pound baked pasta (rotini, bowtie, or macaroni)
  • 1/2 cup hot water, saved from the water you boiled your pasta in
  • 2 cups sharp cheddar cheese, grated
  • 1 egg
  • 1 (8 oz.) package 1/3 less fat cream cheese
  • 1 teaspoon onion salt
  • ground pepper to taste

In a large bowl, whisk together the cream cheese and hot pasta water until softened.  Whisk in the egg, then stir in the cheddar cheese, onion salt, and pepper.    Spoon into muffin tins prepared with cupcake wrappers.  Bake in an oven preheated to 400 degrees for 15-18 minutes or just until the tops of each ‘cupcake’ have been lightly browned.  Serve warm and enjoy!

Easy Handmade Valentine’s Day Cards

Believe it or not, Valentine’s Day is just around the corner.. Whether you’re the buy the premade box of cards Mom or the Try everything on Pinterest Mom, you’ll love this sweet, Super Easy handmade card you can do with any age.

Supplies needed:

  • plain white prepackaged cards and envelopes – available at craft stores
  • red or pink acrylic paint
  • a dish sponge

Grab a dish sponge and cut it into a heart shape – use a small cookie cutter as a pattern if needed.  (Just dip the cookie cutter in some paint or use a stamp pad and transfer the design to the sponge.)

Dampen the sponge and wring it out so that it’s pliable but barely wet.  Alongside your child (at least for the first few), dip the sponge into the red, or pink acrylic paint and then “stamp” the heart shape onto your white card.  Have your child write or draw on the inside – no matter what it reads it will say “love.”

 

 

Out of the Mouths of Babes: National Children's Dental Health Month

February is National Children’s Dental Health Month! This month-long national health observance brings together thousands of dedicated dental professionals, healthcare providers, and educators to promote the benefits of good oral health to children, teachers and of course, parents.

Tooth decay (cavities) is one of the most common chronic conditions of childhood in the United States. Untreated tooth decay can cause pain and infections that may lead to problems with eating, speaking, playing, and learning.

  • About 1 of 5 (20%) children aged 5 to 11 years have at least one untreated decayed tooth.
  • 1 of 7 (13%) adolescents aged 12 to 19 years have at least one untreated decayed tooth.
  • The percentage of children and adolescents aged 5 to 19 years with untreated tooth decay is twice as high for those from low-income families (25%) compared with children from higher-income households (11%).

The good news is that tooth decay is preventable. Starting your child off with good dental care and developing good habits at a young age along with regular dental visits will help children to have lifelong healthy teeth and gums.

Valentines for Children's Hospital, 2016

Will you be their Valentine?

Body Worlds at McWane Science Center

We get so excited when the McWane Science Center brings a cool new exhibit to Birmingham and this time is no exception!

Parenting Notes:

BirminghamMommy had the opportunity to explore the new exhibit, we found it to be incredibly informative and fascinating, but keep in mind that this exhibit is geared more towards middle school aged Children. What you will see are actual human body’s that have been donated to science. There is no censor on this exhibit once you are inside. Entry is ticketed. We think this is an excellent learning tool in teaching Health and Wellness to your children, and is sure to be a conversation starter…  you’ll just have to decide for yourself if that conversation is right for your child.

On January 27, 2016, McWane Science Center in Birmingham, AL will offer a spectacularly unique chance for visitors to explore the intricate biology and physiology of human health and the dramatic effects of disease in BODY WORLDS RX.  This new exhibit is presented by UAB Medicine.

This exhibition, from anatomist Dr. Gunther von Hagens—inventor of Plastination science and creator of the trailblazing BODY WORLDS exhibitions—will make its world premiere at McWane Science Center.  His new exhibition focuses on the most prevalent contemporary diseases that afflict children and adults alike along with their causes and effects.  BODY WORLDS RX is an informative and entertaining presentation of the latest research on top health issues and shall inspire visitors to embrace preventive healthcare.

From organs, to muscles, to the nervous system and to skeletal structures; visitors will have an unprecedented look inside the intricate systems of the most sophisticated mechanism in the world, the human body. Preserved by the process of Plastination, a complex technique that removes the fluids from the body and replaces them with plastics that harden; the specimens on display show impressive comparisons and contrasts between healthy bodies and organs and those stricken with disease. Particular emphasis is put on some of the most common ailments such as back pain, arthritis, cancer, diabetes, obesity, cardiovascular diseases like arteriosclerosis and heart infarctions, dementia, and more.

“We are so happy to bring this exhibit to McWane and to Birmingham.  As a science center, we want to bring exhibits to teach our guests and the public, “said Amy Templeton, President and CEO of McWane Science Center.  “We are fortunate to have such great community partners with UAB Medicine to let us achieve our goal of opening this exhibit.”

Dr. Angelina Whalley, exhibition curator and creative and conceptual designer of the BODY WORLDS exhibitions adds, “BODY WORLDS RX shows human anatomy with far more detail than any textbook. I created this exhibition to encapsulate the key messages of BODY WORLDS and to make each of us aware of the challenges and consequences our current lifestyles may have on our body, our health and our wellbeing at all stages of our life. My intention is to empower the visitor to adopt health habits that are easy to integrate in our daily routines.  BODY WORLDS exhibits have had powerful and lasting effects on visitors, it is my
goal that BODY WORLDS RX is a continuation and distillation of this idea.”

BODY WORLDS RX includes:

Iconic Whole Body Plastinates such as the X-Lady, the Pole Jumper, the Swimmer, the Ligament Body, and more.

Focus Points of the Exhibit:

  • Cardiovascular diseases are the leading cause of death in the United States. Visitors will learn the functioning of the cardiovascular system; explore its dense and long network of arteries and how it can be affected by common diseases.
  •  Smoking and the lungs: We all know smoking is unhealthy, but have you seen it with your own eyes? One look at the blackened smoker’s lungs alongside vibrant healthy lungs provides a dramatic and convincing appeal to anyone who cannot quit smoking.  Visitors will learn how smoking impacts the overall metabolism of the body.
  • Locomotive system: Learn how our current sedentary lifestyle causes effects that are noticeable in our locomotive system. In the exhibition diseases and ailments such as arthritis, arthritis, back pain and other bone disorders are explained.
  • Dementia: Twenty-four million people worldwide suffer from Dementia, 5 Million of which are Americans. It is the 5th leading cause of death in Americans age 65 and older and will be growing dramatically. By 2050, 135 million people are expected to suffer from Dementia. A multi-media installation shows the effects to better understand this disease.
  •  Cancer is the second highest cause of death in the United States. Plastinated organs show cancerous tissues and tumor metastases.
  • Obesity is widespread and continues to be a leading public health problem in the U.S. Almost a quarter of 2-5 year-olds and a third of adolescents are overweight or obese in the U.S. Obesity is impressively revealed in this exhibition through the juxtaposition of body slices of an obese and lean body.

Tickets to the exhibit will be free for members on their first visit to Body Worlds RX. $2 per person each additional visit.
Non members, $5 per visit.
You may not purchase tickets just to that exhibit, they can only be purchased with admission to the whole museum.

A BIG Week for special Events in Birmingham! The Circus will be rolling into to town, opening this Wednesday. According to the most recent media release, there will be no Elephant Walk this year. It is however the last year to see the Elephants in Birmingham.

Also this week, McWane Science Center will open it’s newest exhibit, Body Worlds.. It will run through May 1st and cost is included in the price of admission.

Bodies World Exhibit Opening – McWane Science Center
This exhibition, from anatomist Dr. Gunther von Hagens, inventor of Plastination science and creator of the trailblazing BODY WORLDS exhibitions, will make its world premiere at McWane Science Center Wednesday, January 27. This new exhibition focuses on the most prevalent contemporary diseases afflicting children and adults alike, along with their causes and effects. BODY WORLDS RX is an informative and entertaining presentation of the latest research on top health issues and will inspire visitors to embrace preventive healthcare.

From organs, to muscles, to the nervous system, and toskeletal structures, visitors will have an unprecedented look inside the intricate systems of the most sophisticated mechanism in the world, the human body. Preserved by the process of Plastination, a complex technique that removes the fluids from the body and replaces them with plastics that harden, the specimens on display show impressive comparisons and contrasts between healthy bodies and organs and those stricken with disease. Particular emphasis is put on some of the most common ailments such as back pain, arthritis, cancer, diabetes, obesity, cardiovascular diseases, dementia, and more.

BODY WORLDS RX illustrates common ailments such as back pain, arthrosis, cancer, diabetes, obesity, cardiovascular diseases dementia, and more. Whole-body plastinates, organs and translucent body slices show the complexity of the human body, and its vulnerability in a way that textbooks cannot.

Recipe: Cookie Butter Cheesecake

If you know of Trader Joe’s, you know of the addictive yumminess that is Cookie Butter. Instead of eating it by the spoonful, which we’re not opposed to and will not judge you for, we are always looking for other ways to share the cookie butter goodness with our other foods.

Over the holidays a friend suggested the idea of a cookie butter cheesecake, so I attempted it, and it was good. So very-incredibly-delciously-good I decided it needed to be shared!

So if you’re a cookie butter fan, you can thank me later. (Or curse me when you have to pick up an extra spin class or 12 to work off those extra calories #sorrynotsorry)

What You’ll Need:

1 Graham Cracker Pie Crust
1 Box of Cookie Butter Cookies (for topping)
Whipped Cream (for topping)

32oz of Cookie Butter Cream Cheese (yes this is a thing!!)
1 Cup of Sugar
1 tsp. Vanilla
4 Eggs

What You’ll Do:

Preheat oven to 325°F.

Beat cream cheese, 1 cup sugar and vanilla with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour into crust.

Bake 55 min. or until center is almost set. Run a knife around rim of pan to loosen cake; cool before removing rim. Refrigerate cheesecake 4 hours.

Crumble cookies and top over cheesecake with a heaping spoonful of whipped cream
