
I love pimiento cheese in the summer. It’s the perfect appetizer or sandwich filling. After scouring Pinterest, I found a few recipes that I liked and morphed them together to get this simple and yummy version! Serve this as an appetizer with crackers or make the best sandwich ever using the fluffiest white bread you can find. It’s to die for.
1 pound sharp cheddar cheese (1 bag, finely shredded)
1/4 pound cream cheese, softened
1 jar of pimientos
1/2 cup mayonnaise
Let the cream cheese come to room temperature, then mix it with the mayonnaise. I used a hand mixer for this part.
Add in the bag of cheese, stir.
Add in the drained jar of pimientos and stir without crushing them.
That’s it! The longer it’s refrigerated, the more it gets “set.” I served it after about 2 hours and it was good, but the next day it was perfect. This would be a great dish to make the day before.
