I Can See Clearly Now, Thanks to MyEyeDr.

So, real talk time. It’s been a REALLY long time since my last eye exam. Think a decade, add a couple of years and that’s how long it’s been since I’d had my peepers checked. It’s also about how long I’ve gone without being able to see clearly.

I grew up wearing contacts and glasses but once I got pregnant with my first child, I noticed that my vision started changing for the better so I counted my blessings and went with it. She helped me pick out a style that would work best for my face shape, coloring, etc. We had it narrowed down to 3 choices in about 15 minutes. I was taking selfies, texting friends and after a little deliberation and some voting from the staff and my friends, I had myself a stylish new pair of specs. And to further solidify my excellent choice, my kids, not knowing which ones I had picked, chose the same ones when I showed them the pictures. Score!

November is National Adoption Awareness Month

National Adoption Awareness Month is a time to celebrate families growing through adoption, and SAFY of Alabama is working to raise awareness for the more than 123,000 children and youth nationwide who are waiting to be adopted from Foster Care.

While all aspects of the adoption related issues are important, the focus of this month is on adoption of children who are currently in foster care and hoping to be placed in their forever homes.

Each year, more children enter the system than are adopted. The typical child who has been freed for adoption is at least 8 years old, moves three or more times in foster care, may have been separated from siblings, and will wait five years or more to be adopted. Tragically, tens of thousands will never be adopted and will leave the system at age 18 without families.

One in five of the children in foster care are teens, and at risk of aging out with no permanent family (according to ChildWelfare.gov). Older youth – kids ages 15-18 years old – represent only 5 percent of all
adoptions that take place each year.

Why does this matter? Not only because of the grim statistics facing teens who age out of foster care – which include increased risk for homelessness, human trafficking and incarceration, but also because every youth deserves to have a forever family who will be there as a support in navigating all life’s milestones – high school, college, finding a job and learning the life skills needed for an independent, successful adulthood.

All children deserve loving, permanent homes and there is a critical need for people to become involved. Recipe: Bourbon Buttermilk Pie

As I was searching the interwebs looking for something new and different to add to my Thanksgiving menu, I came across this recipe for Bourbon Buttermilk Pie… I’m a sucker for anything that calls for bourbon, if you are too, let’s both try this for our dessert table!

Slice of Bourbon Buttermilk Pie

Ingredients:

 

  • 1 unbaked 9-inch pie crust, defrosted
  • 3 large eggs
  • 1 1/4 cups Imperial Sugar Extra Fine Granulated Sugar
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon kosher salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 3/4 cup buttermilk
  • 3 tablespoons bourbon or whiskey
  • 1 teaspoon lemon zest
  • 1 1/2 teaspoons vanilla extract
  • 1/8 teaspoon nutmeg

Directions:

 

  • Place one rack in lowest position of oven and one in center, then preheat oven to 325°F. In a large bowl, beat eggs on low speed just until mixed, then add sugar, flour and salt, mixing until incorporated. Add melted butter and mix well.
  • Gently stir in buttermilk, bourbon, lemon zest, vanilla and nutmeg. Pour into prepared pie shell. Bake pie at the bottom of oven for 20 minutes, then carefully transfer to center of oven bake an additional 40 minutes, until the center is set and a thin crust forms on top. Check the pie 30 minutes into baking—if  crust is browning too quickly, shield it with foil and continue cooking until finished. Serve warm, cool, or at room temperature.
  • Store leftover pie covered in the refrigerator for up to 3 days or cover tightly and freeze for up to 2 months.

Recipe: Pumpkin Pie Dip

If you’re looking for a way to mix things up this Thanksgiving, but want to keep with the tradition of Pumpkin Pie… Try it in a dip!

Ingredients:

1 package cream cheese, softened
2 c powdered sugar
1 (15 oz) can pumpkin pie filling
1 tsp ground cinnamon
1/2 tsp ground ginger

Instructions:

Beat the cream cheese and sugar on medium speed until smooth, then add the remaining ingredients and beat well.
Cover and chill overnight.

Serve with apple slices and ginger snaps.
