Winter is the perfect time for a warm cup of hot cocoa but what about a hot cocoa cookie? Yep! Hot Cocoa AND a delicious snack all in one! Give this recipe a try and let us know what you think!

Hot Cocoa Cookies

Ingredients:

1/2 cup unsalted butter
one 12-ounce bag semi-sweet chocolate chips
1 1/4 cups light brown sugar, packed
3 large eggs
2 teaspoons vanilla extract
1/4 cup unsweetened natural cocoa powder
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
about 8 ounces dark chocolate, cut into 1/2-inch pieces
approx. 12 large marshmallows, cut in half

Directions:

Melt chocolate chips and butter in the microwave, combine with the sugar, vanilla, and eggs. Stir in the dry ingredients, then cover the mixing bowl with plastic wrap and chill for 2 hours.

Roll the cookie dough into balls and bake for approx. 10 minutes. Carefully place a chunk of dark chocolate in the center of each cookie and top with half a marshmallow.
