We came across this recipe while perusing the almighty Pinterest. It was a HUGE hit with the family and made a ton, which is a big bonus now with school and sports going on. We love leftovers!
What You’ll Need:
1 Package of your favorite sausage links. (4 pack)
4-5 Potatoes
1 Small jar of banana peppers, sliced
3 tbsp Olive Oil
Salt and Pepper
3 tbsp of creole seasoning. If you’re kids don’t like spicy you may want to scale this back or leave out completely. It’s optional.
What You’ll Do:
1. Spray a large baking pan with non stick spray. Avoid using a flat pan if possible. One with a lip around the edges is best.
2. Slice Sausages into thin rounds.
3. Cut potatoes into 1/2″ chunks
4. Slice Onion and Peppers into strips
5. Place all ingredients onto baking sheet, drizzle with oil and use your hands to mix everything together and make sure it’s all coated. (I actually dumped everything into a bowl with the oil and, salt pepper and seasoning to mix before transferring over to the pan, either way works.)
6. Top with sliced banana peppers.
7. Bake at 400 degrees for 30 – 35 minutes or until the potatoes are tender.
