The Superbowl is just around the corner and that means lots of planning for your party. Since we know food is just as important as the game itself (maybe more,) we’ve been searching the interwebs for something new and yummy.
This one gets bonus points for being easy to eat. We found this one on Pinterest, from Homemade Cravings
Mini Layered Nacho Bites
What You’ll Need:
- 6 Corn Tortillas
- Canola Oil or Cooking Spray
- 1/2 cup refried beans
- 1/2 cup shredded cheddar cheese
- 1/4 cup minced red onion
- 1/2 cup black beans
- 1/2 cup corn
- 1/2 cup chopped tomatoes
- salt and pepper
- 1/2 cup Guacamole or Avocado Dressing
What You’ll Do:
- Heat oven to 400 degrees,
- Cut the tortillas into four even triangles. Lightly coat both sides of each tortilla with canola oil of cooking spray.
- Fit each tortilla into a mini muffin pan well, creating a little cup.
- Bake for 10 minutes.
- While the tortillas are baking, mix the red onion, black beans, corn and tomatoes. Season with salt and pepper.
- Remove tortillas from the oven and at a teaspoon of refried beans to the bottom of each tortilla. Top with about of teaspoon of shredded cheese. Bake for an additional 10 minutes.
- Remove from oven, top each nacho with enough of the black bean salsa to reach the top of the mini cup.
- Top each with a dollop of guacamole or the avocado dressing,
- Serve immediately.
