Parmesan & Lemon Red Potatoes
Ingredients:
2 pounds red potatoes, quartered
1/4 cup butter, melted
1 tablespoon garlic, minced
1 teaspoon salt
1/4 cup lemon juice
1/4 cup Parmesan cheese, shredded
Directions:
1) Preheat oven to 400 degrees.
2) Mix all ingredients in a large bowl and toss well to coat. Spread mixture evenly into a glass baking dish.
3) Bake, covered, in preheated oven for 50 minutes. Uncover and bake an additional 10 minutes or until golden brown.
