Since I’m still eating no meat, I’ve started exploring the world of vegetarian recipes. This week I tried Vegetarian Stuffed Peppers – While they were hearty and filling the flavor was lacking. I will definitely try this or a similar recipe again in the future, it will just need a little kick. I loved the ingredients, and the fact that they cooked in the crockpot, just needed more flavor. My new thing this week was sending a kid to kindergarten. I haven’t been a wreck over it like I thought I would. Instead, I’m more just proud. He’s so well adjusted and I’m not worried that he’ll be lost or missing me. I think he’ll jump right in and love it.
